2-Acetylpyrrole is an organic compound containing a pyrrole ring. It is a product of the Maillard browning reaction and serves as a major flavor component in many foods. It can also function as an intermediate in the synthesis of other active compounds, such as the flavor compound 2-acetyl-1-pyrroline. In vitro, 2-Acetylpyrrole reacts with nitrite to form 1-nitro-2-acetylpyrrole (NAP) and 1,3,5-trinitro-2-acetylpyrrole (TNAP), which demonstrate moderate mutagenicity and strong cytotoxicity.
