Pectinase (EC 3.2.1.15) is a mixed enzyme that hydrolyzes pectic substances. It is primarily found in microorganisms and higher plants and is involved in cell wall metabolism, cell growth, senescence, fruit ripening, pathogenesis, and the abscission process. This product is derived from *Aspergillus niger* fermentation.
