β-Galactosidase (EC 3.2.1.23) is a glycoside hydrolase that breaks down β-glycosidic bonds between galactose and its organic parts. In E. coli, the lacZ gene is the structural gene for β-galactosidase, forming part of the lac operon's induction system. This enzyme can hydrolyze lactose into glucose and galactose, which then enter glycolysis.
