Our starting material is chromatographically pure Methyl Oleate (isolated from the best virgin olive oil available) which is interesterified for the production of crude Triolein. To assure geometric stability of cis double bonds, the material is further purified by such physical techniques as low temperature crystallization and column chromatography. The final purity is followed both by gas liquid and thin layer chromatography.
