Pepsin is the major pig and human gastric protease and a minor pepsin-like gastric proteolytic enzyme. It contributes to the proteolysis of food proteins in the vertebrate stomach.
- Optimal pH for activity is 1.0-3.0.
- Activated by hydrochloric acid (HCl) and trifluoroacetic acid (TFA).
- Inactivated by pH greater than 6.0.
- To reconstitute, resuspend in double-distilled water (pH 5.5 or lower) to 1 mg/mL.
- Reconstituted Pepsin can be stored at 4 °C for up to one month.
- Cleavage specificity for Phenylalanine (Phe) and Leucine (Leu) is best at pH 1.0 and decreased above pH 2.0.
- Irreversibly inactivates above pH 6.0.
