Phenylpyruvic acid is a precursor of the antifungal compound phenyllactic acid. It can improve the antifungal activity of eight lactic acid bacterial strains when added to a defined growth medium and demonstrates improved inhibitory activity against fungal bread contaminants. Additionally, it affects the enzyme activity of the pentose phosphate pathway involved in the oxidative phase in rat brain homogenates and can reduce glucose-6-phosphate dehydrogenase activity.

- Increases phenyllactic acid production up to six-fold for lactic acid bacterial strains.
