Cultivate and enumerate yeasts and molds using Thermo Scientific™ Remel™ Yeast Malt Extract Agar. Malt media for yeasts and molds have been used for many years. In 1919, Reddish described the use of malt extract as a substitute for beer wort in a culture medium1. Fuller and Grimes used a malt agar for studying the growth of yeasts on synthetic media2. Yeast Malt Extract Agar is prepared according to the formulation of Wickerham3,4.
Both fresh and processed food products are subject to fungal spoilage that can affect even heat-processed foods. Certain foodborne molds and yeasts may also elicit allergic reactions or may cause infections.
Yeast Malt Extract Agar medium contains peptone as a source of carbon, nitrogen, and amino acids. Malt extract supplies nutrients necessary for growth of fungi. Dextrose is a carbon source and yeast extract supplies B-complex vitamins to stimulate the growth of yeasts and molds. It is a ready-to-use, solid medium supplied as a slant in 20mm x 113mm Tubes.
