It can improve the antifungal activity of eight lactic acid bacterial strains when added to a defined growth medium and demonstrates improved inhibitory activity against fungal bread contaminants. Additionally, it affects the enzyme activity of the pentose phosphate pathway involved in the oxidative phase in rat brain homogenates and can reduce glucose-6-phosphate dehydrogenase activity.
